A Cahors-style dessert wine made from Cabernet Sauvignon and Merlot grapes from the winery’s vineyards, harvested at optimal ripeness. Immediately upon arrival, the grapes underwent controlled freezing for 3 days. The wine was then pressed in a controlled process and the must was heated over a natural olive-wood fire. The wine matured in oak barrels for a year, under the open sky.
