A deep pink Champagne. On the nose, ripe raspberries, cherries and strawberries, with touches of grapefruit, mint and yeast. Medium body with a lovely mousse and vigorous bubbles. On the palate, juicy ripe raspberries, black cherries and strawberries, along with pink grapefruit, perfectly echo the nose. Very ripe, clean, refined and rich fruit, with a delicate touch of yeasty bitterness that balances the medium-plus acidity and the fruit in a long, elegant finish.
Champagne Drappier is located in Urville, in the south of the Champagne region. The Drappier family has owned this Champagne house for seven generations, with Michel Drappier at its head. Founded in 1808, the house has been owned and run by the family ever since. The winery produces about 1.5 million bottles a year and holds 5–6 million bottles of various types and sizes. Drappier’s production process uses no pumping – everything flows naturally by gravity from the grape reception room down three floors, where the wine is stored in barrels and bottles. Drappier is one of the only Champagne houses that also produces natural Champagne without sulfites. The Drappier family owns 540 dunams (about 133 acres) of vineyards and manages another 500 dunams, and also buys grapes from outside growers to meet its needs. Drappier also produces kosher Champagne, marketed throughout the Jewish world.
